Butter Cookie Recipes

Today’s Butter Cookie Recipes is a real family favorite of mine and can be whipped up in the kitchen in no time at all. These cookies are such fun to make that if you have little children running about the house then you can get them to assist you in the kitchen.

From this recipe you should be able to make at least 18 biscuits. If you want to make more, simply increase the amount of the ingredients that you are using. This recipe is made using the metric system, please convert to Imperial if you use that instead.

Ingredients

180g butter, softened
1 cup caster sugar
1 egg
1/2 cup self-raising flour
1 1/2 cups plain flour
Chocolate freckles, for decoration

Method

1. Preheat the oven to 180°C. Line a rectangle baking tray with non-stick baking paper, or similar greaseproof variety.

2. Place the butter and sugar into the bowl of an electric mixer and beat until light and creamy. Add the egg and beat well. You will notice the color of the ingredients has turned into a pale yellow color

3. Stir in the flours and mix to form a dough. Scoop 2 tablespoons of dough into a ball and squash flat onto a baking tray. Using your thumb, in the center of the dough to create a slight hole (be careful not to go all the way). Continue this process with the remaining dough.

4. Place a chocolate freckle (or other chocolate treat) into each crater and bake in the oven for 10 minutes or until golden brown.

5. When ready place the cookies onto a wire rack to cool down.
